Chickpea Buddha Bowl

Find your zen with a high protein, high fibre, vegan chickpea buddha bowl. Follow the recipe and instructions below


  • 250g cooked Chickpea Rice
  • 130g cooked kale
  • 200g cubed butternut squash, cooked
  • 100g diced beetroot, cooked/prepared
  • 1-2 broccoli spears, cooked
  • Handful pumpkin seeds


Optional: Drizzle of olive oil


  1. Place the kale in the bottom of the bowl, slightly leaning to one side to leave a gap next to it
  2. Place the Chickpea  rice next to the kale, partially over the top of one side
  3. Place the butternut squash into the gap between the rice and kale
  4. Place beetroot between the rice and butternut squash
  5. Slide the broccoli spear(s) between the rice and butternut squash
  6. Sprinkle pumpkin seeds over the top
  7. Drizzle the olive oil on top, if using, and serve
