Greek Spinach and Rice – Spanakorizo

For the high protein, high fibre, vegan and Greek dish, serving 1, follow the recipe and instructions below


  • 450g fresh spinach rinsed
  • Juice of half lemon
  • 1 chopped onion or 2/3 chopped spring onions
  • 2 1/2 tbsp. olive oil
  • 1 teaspoon. dry mint
  • 2 tbsp. chopped dill
  • 2/3 cups of water
  • 1/3 cup of either red lentil rice or chickpea rice
  • salt and pepper

Optional: 1 tbsp. tomato paste


  1. Heat pan with 1 teaspoon of olive oil.
  2. Add spinach and wilt with the lemon juice
  3. In another pot, saute the onion with the rest of the olive oil until soft
  4. Add the spinach, with some dry mint and dill and 2/3 cup of warm water and bring to boil
  5. Add red lentil rice or chickpea rice with salt and pepper (for seasoning) and simmer for about 20 minutes until rice is soft. Add more warm water if needed

Optional: Serve warm with a squeeze of lemon juice, olive oil or feta.
