Stuffed mushroom with red lentil rice

Stuffed Mushroom with Red Lentil rice: With our red lentil rice being so versatile, we decided to make a red lentil rice recipe video just for you

Ingredients 

  • 132g red lentil rice
  • 2 flat portobello mushrooms
  • 8g spinach
  • 10g white onion, raw diced
  • 24g mushroom, raw diced
  • 28g grated chedder cheese
  • 2tsp cumin ground
  • 2tsp chilli powder
  • Pinch rubbed oregano
  • 2 tsp tomato puree
  • 4 tbsp water

Instructions

  1. Pre-heat oven to 190C/ gas mark 5
  2. Bring pan of salted water to boil and cook red lentil rice for approx. 9 mins
  3. Once cooke rinse with cold water
  4. Mix with all the other ingredients, except the cheese
  5. Place the mix into the mushroom and sprinkle the cheese

Bake on a tray in the centre of the oven for 30 – 35 minutes. Season to taste
